Kid-Approved Instant Pot Taco Bowls

In our house, Taco Tuesday can fall on any day of the week. Mexican food is one of our favorite things to eat, but I get tired of just plain old homemade tacos. Not to mention, our stove has been out of commission for awhile now. That's where today's recipe comes in!

Tacos are pretty simple to begin with, right? Well, this one-pot recipe stays true to the simplicity of everybody's favorite Tuesday meal.

Some notes: we use Bush's chili beans, the mild pintos. We also use Old El Paso taco seasoning.

You can really use any toppings you'd like. We tend to keep ours pretty simple with Fritos scoops, sour cream, cheese, and maybe salsa.

Ingredients
  • 1 lb. ground beef
  • 2 16 oz. cans chili beans
  • 8 oz. tomato sauce
  • 1 10 oz. can original Rotel
  • Taco seasoning packet
  • 1/2 cup water

Directions
  1. Using the sauté function on your Instant Pot, brown your beef. Drain any excess grease and return to pot.
  2. Add all your other ingredients and mix well.
  3. Cook on manual 8 minutes with the steam vent closed.
  4. Quick release your pressure. It may be a little soupy at first but will thicken as it sits.
  5. Serve with all your favorite toppings.
