7 Recipes My Family Loved

Today's post isn't fancy, but it is yummy!

One of my goals for this year is to eat at home more. We ate out so much last year for various reasons - busy schedules, convenience, and soaring prices at the grocery store to name a few. I missed sitting down at our table as a family to eat a meal together, so I wanted to make it a priority this year.

That said, I don't like eating the same thing over and over, but I'm not the world's greatest cook. I can follow a recipe just fine, but I'm not someone who can take a bunch of ingredients and create something amazing. So, in an effort to not fall into a rut of cooking the same four or five meals over and over, I've been branching out and trying new recipes.

Here are seven that my family has really enjoyed and that I'll definitely be making again.

Chicken & Rice Casserole

This is a super simple chicken-and-rice casserole that you literally just put in the pan, cover with foil, and bake for about 90 minutes. Everyone in my family loved this one. I barely had enough leftovers to take for lunch the next day!

Tater Tot Casserole

This casserole is a crowd pleaser. It made enough for me to have leftovers not only for myself the next day but also my mom who asked for the recipe. She made it later that week, and even my dad, who is the pickiest eater in existence, liked it!

Baked Ravioli

This is essentially a lazy way to make lasagna with just three ingredients. So simple and makes a ton.

Cheeseburger Casserole

This one might have been my favorite casserole. It was kind of like Hamburger Helper, only so much better.

Lemon Chicken Orzo Soup

I only have good things to say about this soup. We used to have a Greek restaurant that had amazing Lemon Chicken soup, but they closed. I'm so glad I found this recipe because now I can make my own...and feed a small army, ha!

Instant Pot Lazy Lasagna

Here's an actual lazy lasagna recipe for you using an Instant Pot. This was almost as good as Stouffer's.

Cheeseburger Biscuit Bombs

Oh my goodness these stuffed biscuits were amazing! They even heated up well the next day. These were a HUGE hit. I will absolutely be making them again and experimenting with adding in some extras like bacon.

I'm always on the lookout for easy but yummy recipes. Drop your favorites in the comments!

Updating My Closet for Warmer Weather

It's my favorite time of year -- Spring is finally here!

Spring is my favorite season for fashion. The weather is as close to perfect as it can get, at least for a month or so. Where I live, summer always shows up early and with a vengeance. So that means for the few weeks we get to experience it, I go all out with spring layers.

Back in February when we had our first little taste of Spring weather, I added a few things to my closet (see them all here). Now with Spring actually being here for real and the promise of summer-like temps on the horizon, I'm working on updating my closet once again.

Here's a look at some of the things I've recently added to my closet from Old Navy, Target, and Amazon. Most items were bought on sale between February and April. As a reminder, I typically wear size 6 or s/m in clothes and size 7 in shoes.

Tops that I can wear a variety of ways both for work and play are still a priority as I refashion my closet for this stage of my life, but as you can see, I've added a little bit of everything to my closet over the last couple of months.

Vest tops are having a big moment, and I couldn't resist adding these two to my wardrobe. However, I rarely - if ever - wear a vest on its own. I prefer to use them as a third layer, especially this time of year when it's warm enough to wear sleeveless but I still want my shoulders covered. Pastels and shades of pink are also having a moment, which I'm loving.

My love of floral print is still alive and well, which fits right in with one of this year's biggest trends. It's giving me a good avenue for updating my dress collection which has started to feel a bit dated, but I'm also adding it by way of blouses and even shoes.

Sticking with the subject of tops, I've found some that feel like basics but are anything but. I've got this eyelet top in multiple colors, and the green lace-sleeve top is so nice in person. They feel like you're wearing a really nice t-shirt, but they look so much more put together.

I haven't added much by way of bottoms; I'm still pretty good in that department and could probably stand to get rid of some stuff if we're being honest. However, that white skirt from Target that you've probably been seeing all over your feeds? Yeah, I have it. But I bought it before it went viral. And yes, it is that good. So are these red striped linen pants. They're extremely flattering and very comfortable.

14 Teacher-Approved Spring Outfits

It's time for another Real Outfit Roundup where I share the looks I've worn in real life along with a brief explanation of how I put the outfit together and links to shop the same or similar items. It's been a few weeks since my last real outfit post, and it's been crazy busy around these parts. Since Alexis's team placed in the top five at the regional Odyssey competition, they advanced to the state level, which meant extra practices and another weekend out of town.

As our temperatures have continued to warm up, I've been transitioning my closet more toward warm weather outfits. I'm still loving the boho and 90s throwback trends. Vests are having a moment, and I am here for it. You'll see two new ones that I've added to my closet recently, as well as a few new dresses, some new clogs, and the cutest linen pants.

Sizing info: I'm 5'2" and weigh about 140 lbs. I typically wear size 6 or s/m in clothes and 7 in shoes.

This dress is from one of my favorite local boutiques - Willow Jade in Enterprise. If you're local and you've never been, you should seriously check them out. They have great selection and reasonable prices. If you're not local, definitely check out their website!

This is the Finley dress in Lavender. It also comes in a pretty sage green. I'm wearing this in a size small. It's got a split neck, flutter sleeves, pockets, elastic waist, and some subtle ruffle details on the skirt that I absolutely love.

I wanted to keep kind of a French countryside vibe so I finished the outfit with my new favorite woven Mary Jane flats, which unfortunately have sold out in all but two sizes, and it doesn't look like they'll be restocked anytime soon. I've linked to the exact ones just in case they're available in your specific size but also to a comparable pair that has good reviews.

This outfit gives me such a 90s vibe, and I am so here for it. My shirt is a quirky graphic tee that says Pasta Lover's Social Club. I thought it was a nice complement to these red pinstriped linen pants, especially when I added the vest.

Okay, first the pants. Oh man these are good. I thought they might be too warm toned for spring, but I think they're actually pretty perfect to pair with lighter-colored tops. As far as linen goes, this is a thicker linen, which I appreciate. They've got a nice drape and are not clingy at all. They are on the long side, which almost made me rethink my shoe choice, but I honestly just did not feel like wearing heels this day. I got them in a medium so there would be no issues with my hips.

Now for the vest. I've been avoiding this particular style in vests, and now I'm kicking myself for not investing in one sooner (see what I did there?). I mean, how cute is this! I love that it's not boxy; it gives so much more personality to this outfit. I got this in the medium so that the buttons would not pull or gap.

Blouse | Pants (similar) | BeltShoes (similar)

How fresh are these sage green pants? I know everybody always reaches for olive, but I find myself really liking this almost faded look more. I really like how it helps to lighten up the darkness of this floral print blouse by pulling out those nearly hidden green shades in the pattern. My exact pants are from last summer, but I found a pair that is almost the exact same color for you.

My blouse is one that I hemmed and hawed over for awhile. I wasn't sure about the neck, but I find that I really like it in person, at least on this one. I'm not sure I would like it on the lighter patterns. I did size up to a medium in this for length. I wanted to be able to tuck it in or wear it loose without worrying about showing off my midriff.

The green overalls are back! These ones are so perfect for spring, and I really like this lilac color with them. You can't tell from the picture, but this blouse is anything but basic. It's got a really subtle gingham print as well as buttons down the front. The buttons are functional -- thank goodness or I wouldn't have been able to get it over my head! I sized up to a medium here as well. Old Navy's sizing has been a little small in their tops lately.

This dress is another one from Willow Jade Boutique. I couldn't find it on their website, so I'm linking to their dress page for you. It could be on there, and I just overlooked it. Even if it isn't, they have so many pretty dresses for Spring right now.

This dress is so beautiful. It's got all the cottage-core vibes my little heart could ever want. It's also lined so you don't have to worry about it being see through. I'm wearing a small.

I kind of veered away from the lighter-colored outfits for this particular day, but this one is still very much Spring approved. I've had this skirt for awhile, but it's still available in this and other patterns. It's a bit fancier than my other skirts, but it's nice to feel fancy every once in awhile. I have been having a tough time finding just the right color blouse to wear with it, but I think this elevated t-shirt works perfectly.

This shirt is not a blouse but it's not a typical t-shirt either. Definitely better than basic. It's got an eyelet pattern all over which elevates it plus cuffed sleeves. It tucks nicely and has a nice drape to it. It's thick without being bulky, and on this day when we were pushing 90 degrees (in April!) I didn't get overly hot.

This dress should look familiar; it's been around a long time, and I'm always looking for new ways to style it. When I ordered this black linen vest, I didn't really have this dress in mind, but I love the finishing touch it adds here. It's like a whole new dress!

Now, as for the vest, there are some things you should know before you order. I did size up to a medium, but I think I could have comfortably worn the large. It's small, y'all. Now it does have stretchy, smocked side panels, but it's very form-fitting. I know it's intentional, but if you're between sizes definitely consider going up a size.

Dress (similar) | Vest | Shoes (similar)

I wish this dress was still available. I've had it for a couple of years now, and I wear it all the time. Because it was still March, I felt like I needed my shoulders to be covered, so I added my new vest. Then I decided that I wanted to create a top-and-skirt look, so I buttoned it fully, and I love how it turned out.

Remember how I said earlier that we were pushing 90 degrees one day? Well, we were still in the upper 80s the day I wore this outfit, so I decided that was a good day to try out these cute clogs. I really love this style of shoes, and they're surprisingly comfortable for all day wear...even on your feet all day teaching. They're still available in several sizes, but I'm also linking to a similar pair that has a lot of good reviews.

Dress | Vest (similar) | Shoes (similar)

This is another old favorite dress that's been hanging around my closet for years. Sadly, this gorgeous yellow isn't available, but there are lots of other pretty colors/patterns available so I'm linking to the same dress.

I decided to pull out my tried-and-true vest that's been with me for probably 10 years now. It's got a boxier cut than the one you've seen in this post already, but I like the darker denim with this darker yellow. I also like the definition that the collar on this vest adds to this outfit.

Shirt (similar) | DressShoes (similar)

This dress was a spur-of-the-moment buy for me on a random Target trip. I'd been looking at something similar online, so when I saw this in the store I added it to my cart. It's strapless with a smocked top. I usually wear a small in Universal Thread, and this dress is no different. As you can see, this dress is really long. Not too long for me to wear flat shoes with it but it was just an inch or two off the ground. Keep in mind I'm 5'2".

I wanted to be comfortable this day, so I layered this button-up chambray shirt on top. Typically I would tie this at the waist, but I wanted to try out a loose layered look. I'm not sure I love it, but I was very comfortable all day long.

This white skirt is showing up on all the influencer's pages lately. I'm happy to say that I recognized the amazingness of this skirt before it went viral. I was also in need of a new white skirt that I would be able to wear for years to come, so if you're in the market definitely jump on this bandwagon. The skirt really is worth all the hype it's getting -- and it's on sale right now.

I wanted to do a neutral look, so I paired this washed-out floral print blouse with it. Then I felt like it needed some grounding, so I finished the look with the darker brown clogs. Overall I like the look, but in the moment I felt like maybe I had gone too monochrome and pale. What do you think?

I am still loving these jeans if you couldn't tell from how often they appear on the blog. This go 'round I wanted to create a more casual look, and this lavender graphic tee was the perfect complement. It says Bluebird Floral Shop in case you're wondering. I decided to fully tuck it and then added a belt.

These jeans have always given me a 70s vibe, so what better shoes to finish the look out with than my new clogs?

Dress (Target - old) | Cardigan (similar) | Shoes (similar)

Please welcome another old favorite dress to the blog. If you've not figured it out earlier in the post from all the clues I've dropped, I'll just outright tell you now that we're at the end and final outfit. When I find a good dress that's good quality, I snap it up and then I wear it until I can't anymore. This is one of those dresses. I've been looking but have not found anything that even comes close to matching these colors or pattern, so I'm not going to link to anything.

The day I wore this, Spring decided to pull a fast one and drop the temperature by about 30 degrees, so I definitely needed another layer. This incredibly soft, cashmere-like cardigan was the perfect complement to the blue in the pattern of the dress. I am so incredibly sad not to be able to share this exact sweater with you -- it really is the softest one I own! I found one that looks very similar, but I can't speak to its softness.

My 2025 Swimsuit Picks

Spring Break is pretty much the unofficial start of swimsuit season, and since I'm on Spring Break this week, it felt like a good time to share some of my favorite swimsuit finds with you.

I don't buy a new swimsuit every year or really even every other year. In fact, I've been wearing the same four swimsuits since 2022 (you can see four all here -- the ones I wear the most are the floral one piece and the two piece striped top with orange bottoms) plus the green bikini seen in this post, which I got on major sale in 2023 (it's still available in all sizes and totally worth the full price).

This year, I find myself ready to update my swimwear, and I've been on the hunt for modest yet fun suits that make me feel good about my body. Our local stores have been disappointing. I was really counting on Target since I've seen so many people sharing cute suits from there, but our Target has let me down in that department. Old Navy, too, has not been helpful. So to Amazon we go!

Amazon has a ton of good options out there...and a ton of not-so-good ones. Sifting through them all can be pretty overwhelming, especially when you don't really know what you're looking for. Some of the biggest trends this year include cut-outs and one-shoulder styles as well as floral and/or tropical prints and bright colors. All things I can get behind.

These days as I get nearer to 40, I find myself less and less interested in showing off a lot of skin in a bikini. That's not to say that I'm suddenly one-piece or nothing, just that as I'm getting older I want  more modest styles but ones that still feel fun and true to my personality. So that's what this post consists of -- modest one and two-piece swimsuits that still have lots of personality.

Top Row - What I Ordered

Green Color Block Bikini - I love the two different shades of green here. The top has criss-crossed straps and a tie back. The straps are adjustable. The bottoms have drawstring sides so you can adjust how much coverage you have there, which I personally love since this is the area I struggle with the most in bottoms. This suit comes in 28 colors/patterns and has an overall 5-star rating.

Floral One Piece - This suit was my husband's pick, and he honestly knocked it out of the park. I have owned a few Cupshe brand swimsuits before, and they're always good quality. This one fits like a dream, and I absolutely love the back. It comes in 8 colors/patterns and has an overall 5-star rating.

Black Floral Two-Piece - This is not a brand I've ordered before, but I just couldn't stop looking at it. The bottoms are a bit cheeky but not to the point that I feel like I'm exposed. It's hard to tell in the pictures, but the top has a really wide band around the bottom. It also has adjustable straps. It comes in 27 colors/patterns and has an overall 5-star rating.

Middle Row - Close Seconds

One Shoulder Color Block - You have no idea how close I came to ordering this one. I mean, how fun is this pattern?! I've never had a one-shoulder swimsuit before, though, so I was concerned about coverage. This comes in 33 colors/patterns.

Bright Blue Sporty Bikini- I really enjoy the bright colors of this one, and just look at that back! Those straps would make such an interesting tan line...you know, if I actually tanned. It comes in eight colors.

Black/Floral Tie Top Cutout One-Piece & Black Striped Cut-Out One Piece - I really like the classic look of these two. They are different brands, but the style is very similar. The floral print one comes in 29 colors/patterns, while the striped comes in 21.

Bottom Row

Reversible One-Piece - This cute retro-inspired one-piece comes in 8 patterns. While I think the tie-straps are adorable, I don't think they're practical, and they all had just a little too much white in them to make good suits for the lake, which is the primary place I spend my summer.

Two-Piece Peplum -  Another super cute one, but I just couldn't convince myself on the peplum for the long haul. It comes in 20 colors/patterns.

Orange Floral Two Piece - I liked every single pattern offered in this suit, but I ultimately decided that the bottoms were too high cut for me to comfortably wear it. However, it was just too pretty not to share!

One Woman Book Club Review: The Last of the Moon Girls

Don't you just love when a book exceeds your expectations?

I discovered Barbara Davis in late 2023 when I was curating my 2024 One Woman Book Club. The Echo of Old Books became my first pick of that year, and I enjoyed it immensely, which meant I had high expectations for The Last of the Moon Girls when I added it to my book club list for this year, and it did not disappoint. If anything, this book was even better than the first, although comparing them is not really appropriate since they're nothing alike outside of both having a mystery to solve.

I did spend a bit more time with this novel than I did my February book club pick, though not as much as with my January pick. While this book is a mystery at its core, it also has elements of romance and self-discovery. I also appreciated the underlying theme of breaking generational curses.

To avoid spoilers, skip to the end of this post.

***Spoilers***

The Moon family has always been a part of Salem Creek, but not necessarily a welcome part -- there have always been whispers and gossip about the women's special abilities. But when two teenage girls are found murdered in the Moon's pond, all fingers immediately pointed to Lizzy's grandmother, Althea. There was no evidence, and the case was never solved and eventually closed. But in a town like Salem Creek, memories are long. For Lizzy, who was a teenager, the scandal was too much for her already lonely existence; her mother had already ran off never to be heard from again, so when she graduated from high school, Lizzy went to college and never looked back.

Lizzy did not escape the family's special abilities. Hers is her nose, giving her a particular affinity with perfumes which takes her to New York City. When she gets news that her grandmother has passed away, months after the fact, she knows she must return to the farm...if only to get it ready to put on the market and ensure the Moon journals don't fall into the wrong hands. However, the best laid plans often go awry.

When Lizzy arrives at her childhood home, she finds it occupied by Evvie, a beekeeper from Louisiana who came to meet Althea one day and never left. Then there's Andrew, the boy who grew up next door  and was always rescuing Lizzy whether she wanted him to or not, now determined to keep his promises to Althea to do some maintenance work around the farm. Not to mention the special journal Althea left just for Lizzy.

With the farm in no state to go on the market, Evvie having no place else to go, and a ton of unused vacation time piling up, Lizzy decides to extend her stay in Salem Creek and grudgingly accepts Andrew's help to fix the place up. But the unsolved murders of Heather and Darcy Gilman just keep eating at her, and Lizzy knows she can't just let it lie. Despite the whole town, including the sheriff, warning her off, she is determined to find the truth, even when things start to get dangerous. The truth eventually comes to light, and Lizzy must fight to survive it.

There's more to this story than just the murder mystery, though it does dominate the pages as the main plot. All her life, Lizzy has been told that Moon women don't have real relationships. Their responsibility as a Moon woman is to have a daughter and continue the family legacy. It's a "curse" that goes all the way back to the first Moon woman to come to Salem Creek. Lizzy is determined to be the last Moon girl, despite her nearly-impossible-to-fight attraction to Andrew. Of course, she believes she's protecting him from unavoidable heartache and protecting a future daughter from a lifetime of unhappiness, but over the course of the book, with the help of Evvie and Althea's special journal, Lizzy is able to break free from this generational curse.

I think the biggest underlying subplot is one of healing. Because she's a Moon, Lizzy grew up isolated with no friends. Her mother, Rhanna, young and burdened with a terrible gift she told no one about, was never truly a mother, so Althea filled that role. Yet, when Rhanna left in the midst of the murder scandal, it still hurt Lizzy. After Althea's death, Rhanna literally walks and hitchhikes her way across the country from California to come back home. Lizzy, of course, doesn't want her there, but Althea's journal helps bridge the gap between mother and daughter, and the healing that happens for both of them is bittersweet.

***End Spoilers***

If you've been around the blog for awhile, then you'll know how much I enjoy a magical story. The Last of the Moon Girls was truly a magical story, even if the magic was subtle. If I were to liken it to other books that I've read, I would have to choose Midnight at the Blackbird Cafe by Heather Webber, which made my list of best books for 2022, and The Lost Apothecary by Sarah Penner, which was my January 2023 book club pick.

The Spring Shoe Trend You Should Try

Spring is officially my favorite season to style outfits for. I can actually dress seasonally appropriate without feeling like I'm going to have a heat stroke, and all my favorite patterns are in season. I feel like this season and I were made for each other...minus the pollen. I could do without that part.

If you've been around the blog for awhile, then you'll know that I don't put much stock in trends. I wear the things I like and steer clear of the things that I don't. That said, I actually quite like a lot of the trends that I'm seeing in my local stores, and today's post focuses on one trend that I'm honestly surprised to find myself jumping on the bandwagon for: woven Mary Jane flats.

Now let's get one thing straight before we dive in any deeper -- woven and mesh are not the same thing. I do not love the mesh shoe styles that appear to be everywhere this season. In my humble opinion, mesh shoes don't look good on anyone. It does not matter how expensive or what brand name is on them; it looks like you've wrapped your feet in mosquito netting.

The only thing worse are jelly shoes for adults. My feet started sweating just looking at them proudly on display in my local Old Navy. I could feel the phantom blisters of my childhood, which is where I'll leave any and all jellies, thank you very much. (Again, this is just my humble opinion; if you like them, by all means, wear them!)

I was first turned on to these woven Mary Jane flats by one of the people I follow on Instagram showing them off with rave reviews. I said to myself, "Those look so cute on her." But I didn't rush online to look them up; I was pretty adamant that I would not like them and was scared it would be the black, square-toed Mary Janes all over again. Then, I saw them in my local Target, and it was love at first sight. I've been wearing them almost every day since.

Let's talk about why I love these. The woven faux leather helps to elevate the shoe so that it doesn't look cheap. The basket weave allows air flow around your feet, which is nice on warm days, but also keeps your toes mostly hidden so no need to worry if you're pedicure isn't fresh. They also have a cushioned footbed and buckle strap. The only thing I can truly complain about when it comes to these shoes is that on windy days, sand from the school parking lot gets in them, but -- and this is a big but -- my feet have not gotten overly wet on rainy days. Go figure.

Sadly, these exact ones have been so popular that they're almost sold out in every size online. You can check your local Target, but mine no longer has them. However, this is a really popular style right now, so I was able to find quite a few similar options in the same price range for you.

I cannot speak to the quality or comfort of these other brands, but I will say that the Cushionaire pair has good reviews.

Now, take a look at all the ways I've been wearing my new favorite shoes. They're the perfect finishing touch for most of my teacher clothes, are comfortable for all day wear, and add personality to every outfit. As you can see, I wear these shoes with skirts, dresses, and pants. The possibilities are endless!

All outfit details are available on the Shop My Instagram page of the blog or through my Like to Know It Shop.
